Understanding ProBake Convection

LG’s ProBake Convection moves the heating element from the oven floor to the rear wall, directly behind the convection fan. This positions the heat source where the fan is most effective, creating a more even temperature distribution than traditional convection (fan + bottom element).

When to Use Each Mode

  • ProBake Convection — baking, roasting, cookies, cakes, casseroles. Best all-purpose mode. Reduce recipe temperature by 25°F from conventional settings.
  • True Convection / Fan Convection — use when you need maximum air circulation for multiple racks simultaneously. Ideal for dehydrating, bulk cookies, or crisping.
  • Standard Bake — recipes that specifically require bottom heat or that are sensitive to airflow (soufflés, custards, cheesecakes). No fan; heat from the bottom.
  • Broil — high, direct heat from the top element. Position the rack 4–6 inches from the element and monitor closely.

Using Both Ovens Simultaneously

LG double wall ovens allow independent temperature control in each cavity. When cooking in both:

  • Place longer-cooking items in the lower oven (typically runs slightly cooler near the bottom)
  • Allow additional time — both ovens pulling power simultaneously may extend preheat time
  • Use convection in both ovens for the most even results when multitasking

Rack Position and Airflow

Even with convection, rack position matters:

  • Center rack — most baking (single item, single rack)
  • Lower third — pies, pizza, breads that need a well-browned bottom
  • Upper third — broiling, browning, gratins
  • When using two racks simultaneously with convection, stagger pans so they are not directly above each other

Oven Temperature Calibration

If results are consistently over or under cooked at the specified temperature, verify oven accuracy with an oven thermometer and adjust the calibration offset. LG allows a ±35°F adjustment through the settings menu. Refer to your owner’s manual for the specific button combination for your model.

Avoiding Uneven Results

  • Always preheat fully — LG wall ovens signal preheat completion, but allow an additional 5–10 minutes for the oven walls and racks to absorb heat fully
  • Use light-colored aluminum bakeware for even browning; dark pans absorb more heat and can over-brown bottoms
  • Do not block air vents inside the oven with oversized pans or foil
